BUSHMANS KLOOF ANNOUNCES APPOINTMENT OF CHRIS MARE AS HEAD CHEF

Talented Senior Sous Chef Chris Mare has been promoted to Head Chef at Bushmans Kloof Wilderness Reserve and Retreat in the Cederberg. Mare began his journey as a chef with in-house training under the mentorship of one of SA’s top chefs Mike Basset,  first at the renowned Ginja restaurant in Cape Town’s City Bowl and then at the Melrose Arch Protea Hotel in Gauteng.  It was during this time that Mare graduated from the Cape Town Hotel School in Granger Bay, before moving on to become Demi Chef de Partie at the Twelve Apostles Hotel & Spa in Cape Town (February 2003). There he worked his way up to Senior Chef de Partie in the space of two years, before taking up the position of Sous Chef at the Lady Phillips Restaurant at Vergelegen Wine Estate in Somerset West (March 2005). In June 2006 he returned to the Twelve Apostles in the capacity of Junior Sous Chef before transferring to Bushmans Kloof in July 2007 as Senior Sous Chef.  

Mare will continue the tradition of Cape Contemporary Cuisine prepared and presented in the modern style for which Bushmans Kloof is renowned, and his principal focus is guest satisfaction, from which he derives endless pleasure. He says he cannot recall a time he didn’t dream of becoming a Chef, and donned an apron in his mother’s kitchen from a very young age.  Chefs who inspire him are British master chef Gordon Ramsay and three Michelin star Chef Heston Blumenthal, however he cites as his most enduring inspiration Executive Chef at the Twelve Apostles Hotel, Roberto De Carvalho.  Says Chris: ‘I love cooking and every day I learn something new and that is the beauty of preparing food, it’s a never-ending journey of creation which continually excites and inspires me.’
