Bushmans Kloof Wilderness Reserve & Retreat has made a number of key appointments in the Food and Beverage department to take the dining experience at Bushmans Kloof to even greater heights.
Bushmans Kloof offers fresh, home style Cape Contemporary Cuisine that is full of flavour, colour and wholesome goodness, incorporating local ingredients, and home grown fruit and vegetables from our own gardens. The dining menu offers a selection of 5 hors d’oeuvres, and 7 main courses that include a choice of grill dishes, as well as 6 delicious desserts, complemented by an award-winning wine list (Diners Club Wine List Award of Excellence 2005, 2006, 2007).
Diners may also celebrate the Cape Floral Region and the botanical diversity of Bushmans Kloof with a choice of signature dishes that include Fynbos plants and Rooibos tea as ingredients - proudly showcasing our regional cuisine, and some traditional Cape Malay flavours.
NEW APPOINTMENTS
HEAD CHEF: JANNIE MELIS
Melis holds a Grande Diploma Cordons Blues from The Silwood School of Cookery and first joined Bushmans Kloof as Sous Chef in December 2005. He was promoted to Head Chef at Bushmans Kloof in June 2007. Melis started his career as a student at Constantia Uitsig restaurant in 2000 before taking up the position as Head Chef at the Theatre in the Bakery at the Olympia Café and Deli in Kalk Bay in 2002, followed by a stint as Executive Chef at Riverbend Lodge, before he joined Bushmans Kloof.
SOUS CHEF: CHRIS MARÉ
Winner of the Junior Chef of the Year (2000), Maré’s training included the Protea Hotel Saldanha, the President Hotel in Cape Town, and Ginja where he assisted Mike Basset with the opening of the Melrose Arch African Pride Hotel. This was followed by two years at the Twelve Apostles Hotel where he left as Senior Chef de Partie to take up the position of Senior Sous Chef at The Lady Phillips Restaurant at Vergelegen Wine Estate for a year. After that he returned to the Twelve Apostles Hotel for eight months as Junior Sous Chef Tournant, and then took up his position at Bushmans Kloof.
ASSISTANT FOOD & BEVERAGE MANAGER: LESTER TAIT
Tait took up his position as Food & Beverage Manager at Bushmans Kloof in June 2007. He started his career at the News Café Suncoast (Kwa-Zulu Natal), after which he was appointment as Senior Restaurant Manager at Royal Food Services in Durban, before moving on to the Oyster Box in Umhlanga Rocks in January 2006.
RESTAURANT MANAGER: LYNETTE ASSAD
With training in Functions and Events Management, Assad’s extensive experience include 2 years at the Hilton Hotel in Dublin (Ireland) as Banqueting Coordinator, followed by a 3 year stint on the QE2. She worked as Conference and Events Manager at the Marimba Restaurant and Cigar Bar at the CTICC (Cape Town International Convention Centre) for 4 years before taking up her current position at Bushmans Kloof in July 2007.
